Pinipig Cookies




Great for snacks, it's delicious and nutritious too!



Ingredients:
  • 2 cups pinipig
  • 1/2 cup margarine
  • 3/4 cups sugar
  • 2 eggs
  • 1/4 teaspoon lemon extract
  • 2 cups all-purpose flour
  • 2 teaspoons baking powder
  • 1/4 teaspoon salt
  • oil for frying
Cooking Procedure:
  1. Fry pinipig in deep fat until it puffs. Drain in a colander.
  2. Cream margarine until light and fluffy. Add sugar and beat.
  3. Add eggs one at a time. Blend well.
  4. Add flavoring.
  5. Sift together flour, baking powder and salt.
  6. Add the fry ingredients to the creamed mixture.
  7. Fold in the pinipig.
  8. Drop by teaspoonfuls onto greased baking sheets.
  9. Bake for 15 minutes. Makes four dozen cookies.
