Great for snacks, it's delicious and nutritious too!
- 2 cups pinipig
- 1/2 cup margarine
- 3/4 cups sugar
- 2 eggs
- 1/4 teaspoon lemon extract
- 2 cups all-purpose flour
- 2 teaspoons baking powder
- 1/4 teaspoon salt
- oil for frying
Cooking Procedure:
- Fry pinipig in deep fat until it puffs. Drain in a colander.
- Cream margarine until light and fluffy. Add sugar and beat.
- Add eggs one at a time. Blend well.
- Add flavoring.
- Sift together flour, baking powder and salt.
- Add the fry ingredients to the creamed mixture.
- Fold in the pinipig.
- Drop by teaspoonfuls onto greased baking sheets.
- Bake for 15 minutes. Makes four dozen cookies.
